Healthy Peanut Butter Cookies

I don't know about you, but I love having healthier alternatives that I can enjoy without ruining my fitness results or eating a ton of processed ingredients that I later have to detox from.  This cookie is one of my favorites to make.  It's easy, fast and taste amazing!  

INGREDIENTS:

  • 1 cup organic peanut butter (or almond butter)
  • 1 large egg
  • 2 tbsp organic coconut sugar
  • 1/4 cup raw & unfiltered honey ( I used Hawaiian honey, but any honey you have would work)
  • 1 1/2 tsp pure vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp Himalayan salt (or sea salt)
  • 1/2 cup raw chopped pecans
  • 1/2 cup dairy free dark chocolate chips ( I used Hu) 

INSTRUCTIONS:

  1. Preheat oven to 350 degrees.  Line your cookie sheet with parchment paper.
  2. In a bowl, mix all the ingredients except for the nuts and chocolate chips. Stir with a large spoon for 1 to 2 minutes. Then fold in the nuts and chocolate chips.
  3. Drop the dough in rounded tablespoons onto the parchment paper.  Bake for about 10 minutes or a couple minutes longer if you're making larger cookies.
  4. Leave the cookies on the sheet until completely cool.
  5. Store in the refrigerator.
